Classic Pumpkin Pie

There’s nothing quite like the cozy aroma of pumpkin pie wafting through the kitchen, especially when it starts at the source — our very own Whidbey Farm & Market pumpkin patch. From hand-selecting the perfect pumpkins right off the vine to turning them into a delicious, spiced pie, we’re here to help you bring a little slice of autumn magic to your table. Whether it’s for a family gathering, a friendly potluck, or a holiday feast, our pumpkins make it easy to create memorable moments filled with warmth, flavor, and the spirit of the season.

Ingredients:
1 (15 oz) can pumpkin purée
¾ cup packed brown sugar
2 large eggs + 1 egg yolk
1 cup evaporated milk
½ tsp salt
1 tsp ground cinnamon
½ tsp ground ginger
¼ tsp ground nutmeg
⅛ tsp ground cloves
Pie Crust:
1¼ cups all-purpose flour, plus more for rolling
1 teaspoon kosher salt
8 tablespoons (1 stick) unsalted butter, cut into ½-inch cubes & chilled
¼ cup ice-cold water
Mix in a Food Processor
Instructions:
Preheat oven to 375°F (190°C).
Make the crust - Shape into a disk, wrap, and chill for 30 minutes.
In a medium bowl, whisk pumpkin, brown sugar, eggs, evaporated milk, salt, and spices until smooth.
Pour filling into pre-baked crust and bake 45–55 minutes, until filling is just set but still slightly wobbly in the center.
Cool completely on a wire rack, then chill for at least 2 hours before slicing.
